Como ya sabéis, me encantan los tubérculos comestibles, y esta ensalada es una manera estupenda de disfrutar las batatas y remolacha que esta estación nos ofrece. E incluyendo el queso de cabra es una buena manera de asegurar que el calcio está incluido en la dieta.
As you know, I love root vegetables, and this salad is a great way to enjoy the beetroot and sweet potatoes which this season has to offer. And including the goats’ cheese is a good way of ensuring that calcium is included in your diet.
Para 2 personas
Ingredientes
- 200 g de remolacha hervida y cortada en trozos
- 200 g de batata troceada pero no pelada
- 100g de queso de cabra
- 4 cucharadas de aceite de colza
- 1 1/2 cucharada de vinagre de jerez (si no lo hay, se puede usar el vinagre balsámico o aún la salsa de soja)
- sal y pimienta negra
For 2 people
Ingredients
- 200g of beetroot, boiled and cut into pieces
- 200g of sweet potato, chopped but not peeled
- 100g of goats’ cheese
- 4 tbsp. rapeseed oil
- 1 1/2 tbsp. sherry vinegar (if you do not have this, you can use balsamic vinegar or even soya sauce)
- salt and black pepper
Preparación
- En una bandeja para horno, cubre los trozos de batata con 1 cucharada de aceite de colza y un pinchazo de sal, antes de ponerla en una parrilla a 180 grados centígrados durante 15 minutos.
- En una cuenca, mezcla lo demás del aceite con el vinagre y sazona al gusto con sal y pimienta.
- Cuando la batata esté blanda, sácala de la parrilla y mézclala con los trozos de remolacha.
- Echa la mezcla de vinagre con aceite sobre los tubérculos.
- Despedaza el queso sobre lo demás de los ingredientes – a mí me encanta mirarlo fundirse sobre los trozos de batata calientes…
- Disfrútalo como una comida ligera o como un entrante.
Method
- On an oven tray, coat the sweet potato pieces with 1 tablespoon of rapeseed oil and a pinch of salt, before putting it under a grill at 180° centigrade.
- In a bowl, mix the rest of the oil with the vinegar and season to taste with the salt and pepper.
- When the sweet potato is cooked and soft, take it out of the grill and mix it with the pieces of beetroot.
- Pour the vinegar and oil mixture over the root vegetables.
- Tear the cheese over the rest of the ingredients – I love to watch it melt over the warm pieces of sweet potato.
- Enjoy as a light lunch or a starter.
