KHORESH FESENJAN

Una de mis amigas cercanas, Sogi, y su familia a menudo me invitan a la casa de su madre para disfrutar de su deliciosa comida iraní casera. El otro mes, la madre de Sogi me enseñó a preparar uno de mis platos iraníes favoritos, que se llama Khoresh Fesenjan, un estofado persa hecho de nueces, jugo de granada y carne, como las albóndigas en la imagen de arriba.

One of my close friends, Sogi, and her family often invite me to their mum’s house to enjoy her delicious homemade Iranian food. The other month, Sogi’s mother made and taught me how to prepare one of my favourite Iranian dishes, called Khoresh Fesenjan, a Persian stew made of walnuts, pomegranate juice, and meat, like the meatballs in the picture above.

Ingredientes (se rinden 16 albóndigas)

1 cebolla mediana
2 cucharaditas de cúrcuma en polvo
200g de nueces
500g de cordero picado
3 cucharadas de aceite de oliva
1 litro de agua fría, más 5 cucharadas de agua fría
Sal
Pimienta negra
2 hebras de azafrán
1 cucharada de melaza de granada

Ingredients (yields 16 meatballs)

1 medium onion
2 teaspoons turmeric powder
200g walnuts
500g minced lamb
3 tablespoons olive oil
1 litre cold water, plus 5 tablespoons cold water
Salt
Black pepper
2 strands of saffron

1 tablespoon pomegranate molasses


Método

1. Ralla dos tercios de la cebolla y mézclalo en un tazón grande con el cordero picado, pimienta negra molida y un par de cucharaditas de sal. Reserva.
2. Corta el resto de la cebolla y sofríelo con la cúrcuma en una cazuela a fuego medio en el aceite.
3. Tritura las nueces en un procesador de alimentos hasta que tengan una textura casi arenosa.
4. Agrega las nueces a la cebolla sofrita una vez que la cebolla comience a dorarse.
5. Vierte un litro de agua en la mezcla de nueces y añade un par de cucharadas de sal. Cubre la cazuela y deja que hierva a fuego medio hasta que la mezcla de nueces se ablande.
6. Mientras tanto, forma la mezcla de cordero picado en tus manos en pequeñas bolas del tamaño de pelotas de golf.
7. En una sartén, dora las albóndigas con un chorrito de aceite vegetal.
8. Una vez doradas, agrega las albóndigas a la mezcla de nueces.
9. Mezcla el azafrán con el agua restante en una jarra pequeña y añádelo a la mezcla, junto con la melaza de granada.
10. Cocina a fuego lento hasta que la mezcla adquiera un color marrón chocolate profundo.
11. Sirve con arroz hervido, arroz al vapor o arroz con azafrán y una ensalada.

Method

1. Grate two-thirds of the onion and mix it in a large bowl with the minced lamb, ground black pepper, and a couple of teaspoons of salt. Set aside.
2. Chop the remaining onion and sauté it with turmeric in a saucepan over medium heat in the oil.
3. Grind the walnuts in a food processor until they reach a nearly sandy texture.
4. Add the walnuts to the sautéed onion once the onion starts to brown.
5. Pour a litre of water into the walnut mixture and add a couple of tablespoons of salt. Cover the saucepan and let it boil over medium heat until the walnut mixture softens.
6. Meanwhile, shape the minced lamb mixture into small balls the size of golf balls using your hands.
7. In a frying pan, brown the meatballs with a drizzle of vegetable oil.
8. Once browned, add the meatballs to the walnut mixture.
9. Mix the saffron with the remaining water in a small jug and add it to the mixture along with the pomegranate molasses.
10. Simmer until the mixture takes on a deep chocolate brown colour.
11. Serve with boiled rice, steamed rice, or saffron rice, along with a salad.
